Strata

Ingredients Step
2k cups of bread Scantly fill a lidded baking dish with cubes of stale bread (you'll add more volume, and it'll rise more when baked). Measure the volume of the bread (it's probably 4-6 cups), and cut that number in half. We'll call half the volume of bread "k".
If you're going to make the strata the night before, first dry out the bread cubes by baking them at 250 degrees for 5-10 minutes, just until they start to brown.
k cups of eggs (~4-5 eggs per cup)
k cups of milk
seasoning
Beat eggs. Add the seasoning (e.g., salt and pepper, mustard, hot sauce, paprika, nutmeg, herbs, lemon zest) and mix well. Add milk and mix well. Set the egg mixture aside.
k cups of cheese (some reserved for topping)

Butter the dish. Combine the cheese and extras with your bread in the buttered dish, layering or mixing together.
reserved cheese Pour the egg and milk mixture on top of the bread base. Press down to make sure all bread cubes have been submerged. Top the strata with reserved cheese. Cover and let it rest at least 30 minutes, and potentially overnight in the fridge.
When you're ready to bake, preheat the oven to 350 degrees. Bake the strata covered (until it rises too high), uncovering it only for the last 15-30 minutes to brown the top. Bake until the eggs reach 160 degrees. (Depending on how cold your ingredients are, baking may take ~30-60 minutes.)

Wild Rice Dressing

A good amount of work, but very festive.

Ingredients Step
⅓ c. brown basmati Cook the basmati (perhaps soaked, then boiled with ⅔ c. water, then lid added to steam over simmer for 30 minutes until the water is gone, then let stand).
½ c. wild rice Cook the wild rice (perhaps boiled 45-60 minutes with 1½ c. water).
½ c. sushi rice Cook the sushi rice (perhaps rinsed well, then boiling ½ c. water without rice, then adding rice and stirring for 2-3 minutes, then simmering with lid for 10-15 minutes, then let stand).
1½ medium onion, diced Saute.
1 c. carrot, diced
4-5 stalks celery, diced
Add and continue to saute until the vegetables are fully relaxed.
¾ t. thyme, dried
½ t. red pepper flakes
Stir in and saute a bit longer. Then remove vegetables from skillet.
8 oz. tempeh Crumble into the now-empty skillet. Cook over high heat until golden brown. Maybe start with a splash of water to get some steaming too.

When cooked, stir the vegetables back in and heat through.
balsamic vinegar
soy sauce/tamari
Pour atop. Let sizzle. Stir together. Taste and repeat as necessary.
½ c. sunflower seeds, toasted
½ c. parsley
Sprinkle atop and/or stir together.

Curried Tofu Crumble in Pita Bread

Makes about 3 cups / 3 sandwiches.

Ingredients Step
1 carton firm tofu Crumble into cloth. Gather ends and twist to remove moisture. Turn into a bowl.
1/4 t. turmeric
juice of 1/2 lime
a few pinches of salt
Toss with tofu.
2 T. oil
1 heaping T. chopped ginger
1 jalapeno, seeded and minced
1 serrano, seeded and minced
1 heaping T. chopped garlic
Saute over medium heat for 2 min or less -- just until garlic begins to color.
2 onions, finely diced
1.5 t. ground cumin
1/4 t. cayenne
1/4 t. turmeric
Add. Cook, stirring occasionally, until onions soften.
2 Roma tomatoes, seeded and diced Add. Raise heat; stir and cook until the tomato juice has disappeared.
Lower heat and add tofu. Cook until tofu is heated through.
1/2 t. salt, or to taste Season to taste.
3 T. cilantro, chopped
1/2 t. masala spice (optional)
Sprinkle atop.
pita or chapati
yogurt (optional)
chutney (optional)
Serve hot or at room temperature, with chapati or pita.
